Papillon is produced from the traditional grape varieties of our region.

Macabeo, Grenache Gris, and Muscat. Grenache Gris (40%) and Macabeo (around 40%) are grape varieties intended for the production of natural sweet wines. Vinified dry, they produce powerful and aromatic white wines. They express themselves wonderfully on the Latour terroirs. The Macabeo brings elegance, the Grenache Gris the power.

The harvest takes place between August 15 and 25, in order to have balanced, aromatic and fresh grapes. The different grape varieties are harvested by hand, then pressed into whole grains.
After a light settling, fermentation is done in barrels. Aging in barrels, on total lees, without racking for 12 months.
Bottling in the following winter, by gravity, without fining and without filtration.
