In 2001, after a few years of wine-growing experience, Anne and Jacques decided to settle down and look for a corner of the land to plant their roots and make the wines they loved. They came across almost by chance in the middle of winter at Latour de France . On the gneiss and schist slopes of Latour, the old vines of Carignan, Grenache and Syrah express all their finesse and elegance. They settled on a dozen hectares, and gave the name Ausseil (the Bird, in Occitan) to their adventure and derived names to their vintages ( P'tit Piaf , Prize de Bec or du Vent). in the Feathers )
They therefore set up a small estate – artisanal and family – by taking over the vines of a cooperator and installing a cellar in the village. Jacques does the daily work of the winegrower, in the vineyard and in the cellar and has chosen gentle cultivation methods: he works the soil and brings it back to life thanks to the addition of compost and lime. The estate has been organic since 2010. For her part, if Anne works outside, she always remains available at the estate, to mature projects, for vinification and blending; it is also the creative soul of the labels.
At Domaine de l'Ausseil, it is the elegance and freshness of the wines that take precedence!
Jacques and Anne take care of the old vines (around 70 years old), but prepare for the future by planting traditional grape varieties: syrah, mourvèdre, grenache, and carignan.
The vinifications are made as close as possible to nature, without exogenous yeasts and with the minimum of added sulfur.
Jacques de Chancel wants above all to make authentic wines, driven by the terroir more than by people. This is felt in each of his vintages which all “breathe” sincerity!
